Chicken Tikka Pizza with Homemade Dough
Pakistan's favourite pizza, made from scratch — a crisp-bottomed, fluffy crust topped with smoky chicken tikka, onions and a proper cheese pull.

Ingredients
Dough:
- 375g (3 cups) maida
- 2¼ tsp instant yeast
- 1 tsp each sugar and salt
- 2 tbsp oil
- 220ml warm water
Topping:
- 300g boneless chicken, cubed, marinated in 2 tbsp yogurt + 2 tbsp tikka masala + 1 tbsp lemon juice (30 min), then pan-seared
- ½ cup pizza sauce
- 200g mozzarella, grated
- Sliced onion, capsicum, jalapeños
- Chaat masala & fresh coriander to finish
Method
- Dough. Mix all dough ingredients, knead 8 minutes until smooth, and rise covered for 1 hour until doubled.
- Preheat. Heat your oven to its highest setting (220–250°C) with the tray inside — a screaming-hot pan means a crisp base.
- Roll. Divide dough in two, roll each into a 12-inch round, slightly thicker at the edges.
- Top. Spread sauce, scatter half the cheese, then chicken tikka and vegetables, then the remaining cheese.
- Bake. 12–15 minutes until the crust is golden and the cheese is bubbling with brown spots.
- Finish. Sprinkle chaat masala and coriander. Slice and serve hot.
👩🍳 Baker's Tip: Don't overload the centre — a soggy middle is the most common home-pizza mistake. Sear the marinated chicken hard on high flame for that smoky dhuwan-style tikka flavour, or smoke it with a coal for 2 minutes before topping.
