Chewy Chocolate Chip Cookies

Ingredients
- 115g butter, melted and slightly cooled
- 100g (½ cup) brown sugar
- 50g (¼ cup) white sugar
- 1 egg + 1 egg yolk
- 1 tsp vanilla essence
- 190g (1½ cups) maida
- ½ tsp baking soda
- ½ tsp salt
- 150g chocolate chips or chopped cooking chocolate
Method
- Wet mix. Whisk melted butter with both sugars for 1 minute. Whisk in egg, yolk and vanilla until glossy.
- Dry mix. Fold in flour, baking soda and salt — stop as soon as no dry streaks remain. Fold in chocolate chips.
- Chill. Rest the dough 30 minutes in the fridge — this is the secret to chewy (not flat) cookies.
- Bake. Scoop balls onto a lined tray, 5cm apart. Bake 10–12 minutes at 180°C — edges golden, centres still soft.
- Rest. Leave on the tray 5 minutes (they finish cooking there), then move to a rack.
👩🍳 Baker's Tip: Underbaking slightly is the trick — they look underdone when they come out but set perfectly as they cool. Press a few extra chocolate chunks on top right after baking for that bakery look.
