Chewy Chocolate Chip Cookies

Golden edges, soft chewy centres, and pools of melted chocolate — the café-style cookie, straight from your own oven.

Ingredients

  • 115g butter, melted and slightly cooled
  • 100g (½ cup) brown sugar
  • 50g (¼ cup) white sugar
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla essence
  • 190g (1½ cups) maida
  • ½ tsp baking soda
  • ½ tsp salt
  • 150g chocolate chips or chopped cooking chocolate

Method

  1. Wet mix. Whisk melted butter with both sugars for 1 minute. Whisk in egg, yolk and vanilla until glossy.
  2. Dry mix. Fold in flour, baking soda and salt — stop as soon as no dry streaks remain. Fold in chocolate chips.
  3. Chill. Rest the dough 30 minutes in the fridge — this is the secret to chewy (not flat) cookies.
  4. Bake. Scoop balls onto a lined tray, 5cm apart. Bake 10–12 minutes at 180°C — edges golden, centres still soft.
  5. Rest. Leave on the tray 5 minutes (they finish cooking there), then move to a rack.
👩‍🍳 Baker's Tip: Underbaking slightly is the trick — they look underdone when they come out but set perfectly as they cool. Press a few extra chocolate chunks on top right after baking for that bakery look.
